The Lalvin Bourgorouge RC212 yeast has been selected by the BIVB (Bureau interprofessionnel des Vins de Bourgogne). Due to the limited polyphenol adsorption on its cell wall, this yeast promotes the stabilization of the color and tannins during fermentation. This outstanding property makes Lalvin Bourgorouge a wise choice to enhance the polyphenolic content of Red wines. RC212 consistently produces Pinot noirs with good structure, ripe berry, bright fruit and spicy characteristics. Recommended for all full bodied red wine, especially Pinot Noir and Burgundy Style reds.

Palisades Hop Pellets, 1 oz.

Palisade hops are grown in the Yakima Valley of the Pacific Northwest by a family farm with generations of hop growing experience. The Palisades variety was bred from Swiss Tettnanger hops, and have a character similar to Willamette or Fuggles. They exhibit a refined and subtle flavor with an earthy herbal aroma that could also be described as grassy. A slight spicy character with hints of citrus or apricot makes some describe this hop as pretty. As mellow rather than overpowering hop the Palisades are a great hop for beers that strike a good balance between malt and hops and have a smooth drinkable character. Clean, highly flocculent, and highly attenuative yeast. This yeast is similar to WLP002 in flavor profile, but it is 10% more attenuative. This eliminates the residual sweetness, and makes the yeast well suited for high gravity ales. It is also reaches terminal gravity quickly. 80% attenuation can be reached even with 10% ABV beers. A recommended nutrient schedule is to add Servomyces to the kettle at the end of the boil, and then follow that with a 6 grams per 5 gallons addition of Fermaid K half-way through the fermentation. This nutrient schedule acts as a supplement to your yeast for exposure to high alcohols. Think of giving your yeast nutrients as having a water break while running the marathon. Attenuation: 80-85% Flocculation: High Optimum Fermenation Temp: 65-70. Wyeast Equivalent: None
